Pumpkin Pie with an easy crust

I wasn't sure how a phyllo dough crust would work with a pumpkin pie. Turns out it works just fine. I used the back of the can recipe from a can of Libby's pumpkin and just made a crust with the phyllo dough, brushing each sheet of dough with a wash made with 1 tbs. of melted butter and one egg white. I used six sheets of phyllo dough. I bought a box of phyllo dough in the freezer section and it has enough in it for six pies. Cost is about $3.69 for the box.

This pie might have been a little prettier if I had turned the sheets of dough over before I added the pumpkin mixture, instead of trying to fold them in afterwards. For my next phyllo dough pie I'm thinking of a black and blue pie made with blackberries and blueberries.
On a super good note my seed order came today. Time to start the oregano and basil under the grow lights. I'll probably keep them as house plants. Maybe parsley as well.
